ISS premieres White Collection Spring Summer fine dining concept

On 16th July, ISS’ Food Services - Business & Industry (B&I) sector launched their White Collection for spring - summer 2019. 
The White Collection is a 5-star private client dining and hospitality service concept featuring fine dining dishes created by ISS’ B&I chefs, with recipes contributed by Michelin-starred chef Glynn Purnell.

The White Collection is captured in a book of seasonally inspired dishes, created to showcase the talented individuals who have crafted top quality dishes for ISS’ B&I clients. The book celebrates great locally-sourced seasonal ingredients which inspired the chefs to create their dishes, and features contributors’ reflections on the importance of food provenance. This new edition uses spring and summer as the starting point for a creative line-up of beautifully curated dishes, with locally sourced produce, artisan suppliers and raw talent at its heart.

The launch event took place on the Sunborn London Yacht Hotel, located at London’s Royal Victoria Dock. Guests included clients and customers, who were welcomed with a champagne reception followed by tasters from the chefs featured in the book. Recipes were scaled down and beautifully presented in bowl-food format, and guests were presented with a limited-edition copy of the White Collection book. Glynn Purnell was in attendance to support the event and showcase his own culinary contribution to the White Collection.

Glynn Purnell has been ISS’ chef partner for over three years now, helping them promote excellence in food and hospitality. He is involved in all aspects of the business, including the White Collection and offering ISS chefs the opportunity to further their development with work placements in his kitchens.

Glynn commented ‘It has been a pleasure to work with ISS on this White Collection, which has been a great example of talented individuals working with the best seasonal ingredients to produce really excellent dishes. It’s important for chefs to showcase the ‘how’ and ‘why’ behind their choices when it comes to selecting produce and creating recipes, and today’s event has been a brilliant opportunity for the ISS team to demonstrate that thinking, passion and expertise to their customers.’
